101 in 1001 Update (Almost Done!)

Oh. Guys. The struggle is real. Look at all the things I still have to do!!!! I’ve already come to terms with the fact that some of these will just not happen (like the 365 project where you take one picture every day for a year. Uhhhh that time has passed. And let’s be real, running 100 miles in one month is just not going to happen. Nope.) I did knock a few more items off my list, so that’s good, right?

Jen Does Dallas! (Weekend Wrap-Up 1/3)

This past weekend was SO INCREDIBLY FUN! One of my very favorite people (hi, Jen!) came down to visit me in Dallas and we had a blast!! This was the first time anyone has come to visit me (besides my family) since I moved and it was so refreshing to have a familiar face around- I really appreciated having her here a lot. What super fun things did we do? Let me tell you all about it! (I’ve decided to break up our weekend because I have a lot to share and that would honestly be the longest post known to man.)

I picked Jen up from the airport (I should have had a big sign and a chauffer’s hat! Hindsight…) and we dropped her stuff off at my apartment right away. After a quick tour (quick because my apartment is so tiny) we went to In-N-Out Burger for lunch and it was delicious! Plus, I had a coupon for a free burger so that made it even better!

After demolishing our burgers and milkshakes, we went up to Ikea to walk around. Jen had never been to one before and she needed to know what all the fuss was about (she is now all about that fuss, too.) After getting caught in some traffic, we went to Taco Diner for dinner and had our queso blanco, a yummy drink called the Mambo Taxi, and some delicious Mexican food. I had a fried avocado taco and it was a little bit life-changing.

We then went back to my apartment, got into our jammies, and spent the evening coloring, watching New Girl, and eating my homemade ice cream!

Queso a.k.a. Liquid Gold a.k.a. Never Let Me Make This Recipe Again

If I had to pick my favorite food of all time, it would probably be peanut butter. And then if I had to pick my NEXT favorite food, it would 100% be queso. But not just any ol’ queso- the queso dip that you get at a Mexican restaurant. But not just ANY queso dip from a Mexican restaurant- it has to be the white queso. That yellow cheese dip is the worst and I refuse to eat it.

My friend Jen (who just came down to visit me in Dallas and it was the BEST!) and I used to go to this one restaurant near our apartment in Springfield and get the queso dip. All the time. The waiters knew us and would just bring us a bowl as soon as we sat down, we didn’t even have to order it. And then when we both worked together in St. Louis, we would go out after work to a local restaurant to sit and gab and have the queso. These cheese dates were very important to me and so I knew that we would need to eat some good queso when she came down to visit!

Just in case we didn’t find any that met our standards, I decided to try out a queso recipe beforehand to make sure we had some good cheese at some point during the weekend. This. Recipe. Is. So. Good. I don’t think I will allow myself to make this again when I’m not bringing it to a party because I will eat all of it in a shockingly short amount of time. Which is what happened when I made it the first time. No regrets.


All that being said- I’m still on the lookout for the best queso dip in Dallas. I keep getting recommendations from my coworkers, but they haven’t lived up to my expectations. We found a pretty decent dip at a place called Taco Diner, but it just doesn’t compare to our old favorite place… So the search continues!

Viva Los Tacos!

What do you get when you combine music, tacos, lucha libre, and thousands of people standing around in the Dallas heat? You get the Taco Libre festival! I went downtown this past weekend and attended the first annual Taco Libre and it was… fine.


Yeah, it was just fine. Honestly, meh, I could have stayed home and probably had just as good of a time, which I know sounds super lame, but it’s the truth. I guess I’m glad that I went because it was definitely something to experience. I mean, live Mexican wrestling… how often do you get a chance to see that?!?


I bought my ticket ahead of time (I’m so glad I did because it was DOUBLE the price to buy a ticket at the event!) and had to wait about 30 minutes to get in. Let me rephrase that- I had to wait 30 minutes while standing in the sun with no shade and no breeze. It. Was. So. Hot. Outside. I’m so glad that I wore shorts and real talk- I still got SO SWEATY. It was gross. It was so crowded and there were so many stands to get street tacos! Delicious!

I didn’t stay too long because I said that I would go to a BBQ at a coworker’s house, but it was definitely an experience. It probably would have been a little more fun if I wasn’t there by myself (I was supposed to go with a friend but she had to cancel last minute) but I still had a pretty ok time. I mean, there were tacos. You can’t have a terrible time when there are tacos. (Insert taco emoji here.)
